Bean Lima Madagascar

LIMA BEAN, Madagascar  (Phaseolus lunatus)

Madagascar beans are a type of lima bean that is left to mature on the vine and harvested as a dried legume. It is also considered a seven year bean. We have found the vines to be very abundant and easy to harvest. Like most other “soup” beans, soak them overnight before cooking.
