Pumpkin, Australian Ironbark (C.Maxima)

Pumpkin Australian ironbark has an intriguing exterior texture and its reputed hard, thick skin needs an axe for the first cut. However, the skin is reasonably easy to cut when freshly harvested and it will become thicker as it ages. The flesh is a rich orange colour, dry and sweet that is perfect for baking and roasting.
